It probably would be ok, as long as you cook things long enough for the alcohol to evaporate. You might want to check with your doctor to be sure.

No matter how much cooking you do, a trace of alcohol remains. Some of the alcohol binds very tightly to water molecules, technically known as an “azeotrope” and is not boiled off. So, it depends upon “how” allergic you are to alcohol. A “trace” probably will not hurt, as trace amounts of alcohol are produced naturally in the body during the digestive process.

When cooking with alcohol the alcohol burns off with the heat and only the flavor is left.

The alcohol doesn’t all cook out, just a portion. Try using lemon juice and a touch of vinegar instead.

You can buy non-alcoholic cooking wines at the grocery store. They are often kept in the same section as the vinegar.

Even though the alcohol burns off, the sulfates in the wine are what most people are allergic too. Give it a try, but be ready to call the paramedics.

I am a recovering alcoholic of several years. (Allergic to alcohol). The alcohol will burn off-flammable, so technically it is safe, however to be on the safe side, use the same amount stock (chix, beef, ham, vegetable stock) which ever one will compliment your dish.
